My Turkey Brine

I hope you all had a great Turkey day, and enjoyed their food as much as I did. Our turkey turned out great, and I even took a few pictures that I wanted to share. I brined my bird this year, and it worked out so great that I think it’s our new tradition. Here is what I did to achieve this delicious bird:
Brined the bird for two days using a 6 gallon food grade bucket. I kept it on the back porch at temperature ranging from 18 to 38 degrees.
Drained and rinsed in cold water. Patted it dry. Placed it in the 18 inch smoke vault and cooked for 7 hours at 225. I changed to chip try out twice using wet apple chips.
Kept water in the water pan through out the cooking, strained and used drippings for the gravy.
14 lb turkey
two gallons water
2 cups kosher salt
1/4 cup ground sage
1/2 cup brown sugar
2 Tablespoons cloves
1/4 cup garlic salt

A word from the winner

I would like to thank Camp Chef once more for picking me as the winner of the Keg Roaster.What a awesome cooker. I cooked a 12.99 LB Turkey on the roaster and it was awesome . I used some seasoning on the inside of the turkey and rubbed the seasoning on the out side of the turkey.And used a coke in the middle for moisture and more flavor. The way the Keg Roaster roasted the turkey it was awesome. It was moist and tender and had the best roasted flavor i have ever tasted. And the Family said it was the best Turkey that they have ever had.And i am looking foward to cooking some chickens on the Keg Roaster soon. The Keg Roaster will make a awesome Christmas gift. And thanks for letting my family be the one to have a awesome turkey for our Thanksgiving Dinner and many more to come .

Mustard Turkey!

*Thanks to Mark for sending us this great picture and story!
Last year at the Sportsman’s Warehouse in Arizona when we participated in a Turkey Roaster demo, Gary surprised us all with his version of his favorite spice - MUSTARD. Here is a pic of the infamous dish. He claims it was due to the Rojo Seasoning from Penzeys Spices that did this….we don’t believe him!
